It’s unlike anything I’ve ever tasted, and you can entirely customize the component mix to your preferences. The flavors of this shrimp gumbo must be patiently developed and are best when served over rice.

MAKE SOUTHERN SHRIMP GUMBO: INSTRUCTIONS

  1. In a large pot, melt the butter and canola oil before adding the flour. The roux needs to simmer and be stirred continuously until it turns a pale chocolate colour. In essence, the butter is being browned (but not burned! Because it will take a bit of time, have patience.)
  2. Add the chopped celery, onion, and bell pepper. The “holy trinity” is what Cajun and creole food refers to as. Similar to “mirepoix,” the French equivalent. Stirring often, cook for a further 10 minutes.
  3. After, Two minutes later, add the minced garlic and continue stirring.
  4. Add the 2 Tablespoons of canola oil and the chopped okra to a 12-inch-wide skillet (add okra while another il is still cool).
  5. See the leftover stock to pour some into the skillet and scrape up the stuck bits until the okra is lovely and tender and the sausage appears to have partially browned and is sticking to the pan (this adds great flavor to the gumbo).

6. Add all of these ingredients to the pot and bring to a boil. For around 45 to 60 minutes, simmer with the cover on.
7. Now, In the meantime, combine the shrimp with the crab boil in a bowl, and swirl to evenly coat the shrimp. When not in use, cover the bowl and keep it in the refrigerator.
8. Then, 10 minutes prior to your mealtime, add the shrimp to the gumbo and thoroughly mix. Cook for 10 minutes on low heat with a new cover.
